Honey Processed Coffee:
A honey processed coffee means that instead of the traditional washing away of the fruit that surrounds a coffee bean (seed) prior to drying out, the farms only remove the cherry skin and leave the sweet, fruity mucilage. They then sun dry these beans with the fruity mucilage on large concrete patios, leaving a unique and desirable flavor to the coffee.
Specifically, this coffee is a Yellow Honey, meaning 50-75% of the mucilage was removed prior to sun drying.
Origin Information:
This coffee is from Finca La Isabelia in the Jinotega region of Nicaragua. The farm is family owned and operated and most of the water that is used to water their crops originates from natural springs on the same property. The coffee is cultivated under tree canopy and banana trees, and has gone to the Nicaraguan Cup of Excellence and qualified in the top 15 coffees in the country.

Best coffee ever
It has to be tried. My family is in love with this coffee. I gave it for Christmas. We usually do 1/3 Cafe to 2/3 decafe. Now we need this is decafe. We are literally having coffee discussions about how we incorporate treating ourselves to full caffeine so we can have this a couple of times a week unadulterated. It's a sickness at this point. It's so good. Can it be decaffeinated? Swiss water? Idk... but someone should work on it. I need to look and see. In the mean time we are working our way through all our other coffee so we can legit just buy this. Crazy good.
