We roast this coffee Full City to create a mild, balanced, and low-acidic brew. The beans are decaffeinated using the Swiss water process developed by the Swiss Water Process Decaffeinated Coffee Company. This method uses hot water, as opposed to solvents, to wash, soak and remove 99.9% of caffeine from the beans while still leaving the delicious flavor.
