Pearl sugar is granulated white sugar that is processed into small grains; The grains are then polished to a pearl like finish.
This distinctive and especially sweet sugar does not melt when baked and retains it's appearance after baking. Pearled sugar adds a decorative touch to baked goods especially when food coloring is added. Typically, pearl sugar is used in Scandinavia (and elsewhere) to decorate cookies, cakes, cinnamon rolls and much more.
