Holy Graille Honey sits atop its perch on Troy Hill, just minutes from the Strip District. Owner and Beekeeper Bryan Mathie has been keeping bees since 2011. He and his wife, Jane Graille (Hence the name) lives next door to St. Anthony’s Chapel and their bees pollinate the churches gardens and trees along with other neighbor’s flowers
on top of Troy Hill, so this truly is holy honey!
They have three hives located behind their home on the top of the hill
and collect honey two to three times a year capturing the unique tastes
of each season:
Spring honey is light and can range in taste from minty to floral
or even fruity from the fruit trees in the yard.
Summer honey captures the deep richness of Pittsburgh and looks like
classic honey and tastes fresh and angelically sweet.
(Current lot) Early autumn honey captures the fall tastes of Pittsburgh and has a deep
red color. Very robust, molasses-like honey which adds flavor to any drink or
dish.
